Instructions
Peel the apples, remove and discard the core. Chop the apples into dices and add to a mixing bowl.
Add sugar, cinnamon and a pinch of salt to the bowl and mix with a spoon.
Heat up a frying pan on medium heat and melt a bit of butter.
Add the apple mixture to the pan. Simmer for 3-5 minutes.
Add jam and mix the ingredients.
Add flour until the mixture thickens. Switch off the heat. Add raisins, mix and set the pan aside. Cool for at least 20-30 minutes.
Preheat oven to 200°C (400°F).
Cut the puff pastry into equal squares or use pre-cut sheets.
OPTIONAL: If you like pecan nuts, chop and add them to the apple mixture.
Add the filling to the pastry. Use a spoon to add the filling to the center, leave the edges free.
Cover the edges with a tiny bit of water to help the dough stick.
Close the pastries and use a fork to press the edges.
Place the pastries on an oven tray lined with parchment paper.
Beat an egg and brush the pastries. Sprinkle a bit of brown sugar on top.
Make tiny vent holes with a skewer or fork.
Bake in the oven for 15-20 minutes at 200°C (400°F) until golden brown. Serve warm.
Notes
Consider serving these pastries as a dessert with vanilla ice cream and a few mint leaves.
