Heat a frying pan over medium heat. Dice the onion and grate or chop the garlic. Add these ingredients to the pan with olive oil, and fry for a few minutes until soft.
Add the vegetarian minced meat to the pan. Add the cayenne and cumin, then stir to combine.
Add the tomato puree and bay leaves, mix and let it all simmer for 15 minutes over low to medium heat. Make sure to cover the pan with a lid.
Cook the rice with water for 10-12 minutes
Add the the beans and corn to the tomato sauce, then mix well.
15 MINUTES LATER: add the chocolate and beer, and let it simmer for 10 minutes over medium heat. Don’t cover the pan now, as the liquid needs to evaporate.
Add the cream cheese to a bowl, add water and mix with a fork. Set aside.
Cut the avocado into small slices
Remove the bay leaves from the pot.
PLATING: Add the rice to a plate, then add the sauce. Place the cream cheese in the center, then arrange the avocado slices, tortilla chips, and pickled onions in a circle around it. Top with sesame seeds and coriander.
Notes
Alcohol evaporates when cooking, it is getting less the longer you boil it. But it can take a few hours to fully evaporate. Therefore, I recommend using alcohol-free beer if you are preparing this recipe for those who do not consume alcohol.
