Instructions
Preheat the oven to 160°C (320°F).
In a mixing bowl, combine the shredded coconut, sugar, vanilla extract and salt.
Separate the eggs in a small bowl, keeping the egg whites. Add the egg whites to the coconut mixture and mix.
Line a baking tray with baking paper.
Use a cookie scoop or tablespoon to form balls and place them on the tray.
Bake in the oven for 20-25 minutes until the macaroons are golden brown.
Remove from the oven and let them cool down.
Notes
Optional:
Melt chocolate and dip the coconut macaroons in it. Place them on baking paper and let them cool in the fridge for about 30 minutes.
