Add a sieve to a mixing bowl. Add the flour through the sieve, add sugar and baking powder.
Remove the sieve. Add soft butter and an egg and mix until combined.
CAKE FILLING (bowl 2)
In a large bowl, add sugar, vanilla pudding powder, butter and eggs.
Add quark, sour cream and whipping cream. Mix until smooth.
Add quark, sour cream and whipping cream to the bowl. Mix all ingredients until smooth.
CAKE TIN
Grease a cake tin with butter, then add the cake mixture (bowl 1) to the tin. Spread and press the dough with a spoon or glass, create an 1.5 cm (1 inch) edge.
Pour in the filling (bowl 2) and smooth the surface with a spatula.
Bake for 75 minutes.
Cool at least for 30 minutes.
TOPPING
Spread vanilla cream on top with a spatula.
Slice the citrus fruits and arrange them on the cake.
Add blueberries and mint leaves.

*Quark is a traditional German cheese; use labneh, cottage cheese, cream cheese, ricotta cheese or Greek yogurt if unavailable.
