Pears with Vanilla Skyr, Blanched Almonds and Red Wine Sauce

750mlred wine
1orange
1cinnamon stickor use ground cinnamon
10cloves
2star anise
1/2tspvanilla essence
1tbspsugar
5 squareschocolate
8tbspalmonds
250mlvanilla Skyror use vanilla yogurt
Instructions
Peel the pears. Cut them in halves and remove the core with a knife or melon baller.
Cut a slice of orange and insert the cloves into it. Juice the rest of the orange.
Add to a cooking pot; red wine, cinnamon, anise, vanilla essence, pears and orange juice.
Add a lid and simmer on low heat for about 45 minutes.
Turn off the heat and let cool for at least 2-3 hours (preferably overnight) with the pears in the sauce.
Chop the almonds. Roast them in a frying pan over medium-high heat until golden. Set aside to cool.
Add around 1 ladle of the sauce to a saucepan. Add chocolate squares and sugar. Whisk on medium-high heat. Add a spoon of flour if you wish the sauce to be thicker.
Heat up the pears in the pan.
PLATING
Use a plate and add a couple of tablespoons of Skyr to the plate. Make swirls. Add the pears to the center. Use a tablespoon to sprinkle a bit of the chocolate-wine-sauce. Top with almonds
