Instructions
Preheat oven to 100°C (210°F).
Remove the vine from the tomatoes, rinse with water and cut them in half.
Place the tomatoes on an oven tray lined with baking paper.
Sprinkle Italian herb mix and salt over the tomatoes.
Bake the tomatoes for 90 minutes at 100°C (210°F).
Remove the tomatoes from the oven and increase the oven temperature to 175°C (350°F).
Transfer the tomatoes to a plate or chopping board and carefully squeeze them with a fork.
Return the tomatoes to the oven tray and bake for an additional 35-40 minutes at 175°C (350°F).
Remove the tomatoes from the oven and place them on a plate to cool for 10-15 minutes (do not let them cool on the paper to avoid sticking).
Transfer the tomatoes to a jar, add vinegar, a bit of salt and a little Italian herb mix.
Add the vegetable oil. Add the lid and shake the jar.
