Japanese Ramen

Miso Ramen with Shiitake, Boiled Eggs and Vegetables

Equipment

  • stock pot or big cast iron
  • frying pan
  • small pot

Ingredients
 

  • 400 grams noodles
  • 140 grams miso paste
  • a little bit sesame oil
  • 1 liter water
  • 3 mushrooms shiitake*
  • 2 cloves garlic
  • 1/2 cm ginger fresh
  • 1/3 chili pepper or chili flakes
  • 2 spring onions aka scallions
  • 2 bok choy
  • 2 tbsp sweet corn
  • 2 tbsp edamame
  • a little bit sesame seeds white/black

Instructions

BROTH

  • Clean and chop the spring onions (aka scallions). Slice them thinly, separating the white and green parts. The white parts will be used for the broth and the green parts for the topping.
  • Heat a stock pot or large cast iron pot over medium-high heat. Add a bit of sesame oil.
  • Grate the garlic and ginger and add them to the pot. Mix with the oil.
  • Slice the chili pepper thinly or mash it with a mortar and pestle. Add it to the pot.
  • Add the white parts of the spring onions and fry with the other ingredients.
  • Add the miso paste and mix everything together.
  • Add boiled water and mushrooms. Stir all ingredients, cover the pot, and simmer on low heat for at least 15 minutes.

BOK CHOY

  • Wash and halve the bok choy lengthwise.
  • Heat a frying pan on high heat and add sesame oil.
  • Sear the bok choy on high heat.

EGGS

  • Boil water in a pot. Add the eggs with a spoon once the water is boiling. Boil the eggs for 6 minutes.
  • After 6 minutes, discard the hot water and rinse the eggs with cold water.

MUSHROOMS

  • Use a fork or slotted spoon to remove the mushrooms from the stock. Place them on a chopping board and slice them.

NOODLES

  • Add the noodles to the stock. Check the package for the exact cooking time. Simmer on low-medium heat.

EGGS (continued)

  • Peel the eggs and cut them lengthwise in halves.

PLATING

  • Add the noodles to a deep bowl and pour the stock over them.
  • Place the bok choy on the side.
  • Add sweet corn and edamame (heat them up in a pan or microwave if desired).
  • Add the sliced mushroom and the eggs.
  • Top with the green parts of the spring onions and sprinkle with sesame seeds.

Notes

*Use the shiitake mushroom or any other strong flavoured mushroom type you like.
