Bring a taste of the Netherlands to your kitchen, because I will introduce you to “Stamppot,” a filling and traditional Dutch dish. Stamppot is a comforting meal made from mashed potatoes combined with other vegetables. For this version, we are using sweet potatoes and Brussels sprouts and making an unexpected twist.
Finding “rookworst,” or smoked sausage, outside of the Netherlands can be tricky, but feel free to use your favourite sausage. If you ever visit the Netherlands, you can find Unox sausages at major supermarkets like Albert Heijn and Jumbo. HEMA stores also offer a great selection, both meat and meat-free options.
Dutch Stamppot with Sweet Potato and Brussels Sprouts
Mashed Vegetables with Smoked Sausage

- pot
- potato masher
- frying pan
- small bowl for gravy
Ingredients
- 500 grams brussels sprouts
- 500 grams sweet potato
- 1 banana
- 40 gouda cheese
- 160 milk
- 55 grams butter
- 2 smoked sausages* or any other sausage
SERVE WITH (optional)
- pickle spears
- small pickled onions
Instructions
- Clean the brussels sprouts. Slice of the bottom and remove outer leaves. Clean the sweet potatoes and cut them into cubes.
- Add brussels sprouts and potato to a pot. Cover with water and boil for 10-12 minutes on high heat.
- Melt butter in a frying pan on medium-high heat. Add sausage and fry golden brown. Make sure to add a lid to the pot.
- Discard vegetable water. Use a potato masher to mash all vegetables.
- Add milk, cheese, salt and pepper to the mashed vegetables. Mash again.
- Slice a banana and add to the mashed vegetables. Mash but keep some chunks of banana.
- Add mashed vegetables to a plate. Make a well in the centre and add the 'jus' (Dutch for gravy). Add sausage and serve with small pickled onions or pickle spears.
Notes
“Stamppot” is a traditional Dutch dish typically made from a mix of mashed potatoes and one or more additional vegetables. To make this dish even more authentically Dutch, create a well in the “stamppot” using the back of a gravy ladle and pour the gravy directly into the well, without using a bowl.
* I am using a vegetarian smoked sausage, although the original version contains meat. I recommend purchasing the smoked sausage from the brands Unox or Hema, they both offer vegetarian options.
