Apple Cake
Easy Apple Loaf Cake with Blanched Almonds

Equipment

Ingredients
- 3 apples use sweet apples (e.g., Pink Lady)
- 250 grams flour all purpose
- 3 eggs
- 50 grams sugar
- 15 grams baking powder
- 50 grams coconut oil
- 1 tsp cinnamon
- 1/2 tsp allspice aka piment
- 1/2 tsp salt
TOPPING
- 1/2 apple
- 2 tbsp blanched almonds
- a bit cinnamon
- a bit powdered sugar
Instructions
- Preheat the oven to 175°C (350°F).
- In a mixing bowl, place a sieve on top and add all the dry ingredients (flour, baking powder, sugar, cinnamon, allspice and salt). Mix well.
- Add the coconut oil and eggs to the bowl.
- Grate the apples with a box grater and add the grated apples to the batter. Mix thoroughly.
- Line a loaf pan with baking paper or grease with coconut oil. Pour the batter into the pan and spread it evenly with a spatula.
- Cut an apple in half, remove the seeds and slice it as thin as possible. Arrange the apple slices on top of the batter, sprinkle with a bit of cinnamon and add blanched almonds.
- Bake for 65 to 70 minutes at 175°C (350°F).
- Let the cake cool for a few minutes before slicing into pieces of 2.5 cm (1 inch).
