Equipment

  • Loaf Pan

Ingredients
 

  • 250 grams flour
  • 1 tbsp baking powder
  • 3 bananas
  • 1 tsp cinnamon
  • 100 grams butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 50 grams sugar

Topping

  • 1/2 banana sliced
  • a few dates
  • a couple pecan nuts
  • salt flakes

Instructions

  • Preheat the oven to 175°C (350°F).
  • In a mixing bowl, place a sieve on top and add the flour, cinnamon and baking powder. Mix all ingredients together.
  • Add the sugar, butter, eggs, vanilla extract and salt to the bowl. Mix until well combined.
  • In another bowl, mash the bananas with a fork. Add the mashed bananas to the batter and mix.
  • Grease a loaf pan with butter. Pour the batter into the pan and top with slices of banana, dates, nuts, and a sprinkle of kosher salt.
  • Bake for 70 minutes on 175°C (350°F).
  • Let the cake cool for a few minutes before slicing into pieces of 2.5 cm (1 inch).

Notes

The outcome of this recipe improves when using ripe bananas because they are sweeter.
