Banana Bread with Dates and Nuts

Equipment

Ingredients
- 250 grams flour
- 1 tbsp baking powder
- 3 bananas
- 1 tsp cinnamon
- 100 grams butter
- 2 eggs
- 2 tsp vanilla extract
- 50 grams sugar
Topping
- 1/2 banana sliced
- a few dates
- a couple pecan nuts
- salt flakes
Instructions
- Preheat the oven to 175°C (350°F).
- In a mixing bowl, place a sieve on top and add the flour, cinnamon and baking powder. Mix all ingredients together.
- Add the sugar, butter, eggs, vanilla extract and salt to the bowl. Mix until well combined.
- In another bowl, mash the bananas with a fork. Add the mashed bananas to the batter and mix.
- Grease a loaf pan with butter. Pour the batter into the pan and top with slices of banana, dates, nuts, and a sprinkle of kosher salt.
- Bake for 70 minutes on 175°C (350°F).
- Let the cake cool for a few minutes before slicing into pieces of 2.5 cm (1 inch).
Notes
The outcome of this recipe improves when using ripe bananas because they are sweeter.
