Apple Loaf Cake

Bored of banana bread? Try an apple loaf cake instead. This recipe is beginner friendly, so anyone can make it. Tastewise, it’s similar to an apple pie, but in loaf form. It’s also much quicker and easier to make than a traditional apple pie.

Apples

For this recipe, I used Pink Lady apples, but you can use any sweet apple you like. I wouldn’t recommend using Granny Smith apples or other more sour varieties. I tried it once (see the 4th picture below) and didn’t like it as much, as the contrast with the cake was too strong.

To grate the apples, wash them first, then use a coarse grater. Make sure to dry them before grating so you have a better grip.

Toast

Got leftover cake? Pop a slice in the toaster or toast it in a frying pan without oil, then serve it with a bit of salted butter. It’s really good, maybe even better than a regular slice.

Equipment

  • Loaf Pan
  • thin sieve

Ingredients
 

  • 3 apples use sweet apples
  • 250 grams flour all purpose
  • 3 eggs
  • 50 grams sugar
  • 15 grams baking powder
  • 50 grams coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp allspice aka piment
  • 1/2 tsp salt

TOPPING

  • 1/2 apple
  • 2 tbsp blanched almonds
  • a bit cinnamon
  • a bit powdered sugar

Instructions

  • Preheat the oven to 175°C (350°F).
  • In a mixing bowl, place a sieve on top and add all the dry ingredients (flour, baking powder, sugar, cinnamon, allspice and salt). Mix well.
  • Add the coconut oil and eggs to the bowl.
  • Grate the apples with a box grater and add the grated apples to the batter. Mix thoroughly.
  • Line a loaf pan with baking paper or grease with coconut oil. Pour the batter into the pan and spread it evenly with a spatula.
  • Cut an apple in half, remove the seeds and slice it as thin as possible. Arrange the apple slices on top of the batter, sprinkle with a bit of cinnamon and add blanched almonds.
  • Bake for 65 to 70 minutes at 175°C (350°F).
  • Let the cake cool for at least an hour before slicing the cake into pieces of 2.5 cm (1 inch).
