Spanish Pan Con Tomate
Toasted Bread with Grated Tomatoes, Garlic and Olive Oil

Equipment
- toaster or use a frying pan
- grater
- bread knife
Ingredients
- 4 tomatoes
- 1 ciabatta bread or french baguette*
- 2 garlic
- olive oil
- sea salt flakes
- mixed pepper
Instructions
- Cut the bread lengthwise with a bread knife, then slice the halves into pieces about 7 cm (3 inches) wide.
- Grate the tomatoes by cutting off the tops and pressing the flesh against the grater.
- Peel the garlic and cut it in half.
- Toast the bread.
- Once toasted, rub the garlic over the warm bread.
- Drizzle a bit of olive oil on top of the bread.
- Use a tablespoon to add the grated tomatoes, then top with pepper and salt flakes.
Notes
*Use any crusty bread you like.
This is a simple Pan con Tomato recipe. You can upgrade the dish by adding slices of cheese, green olives, and/or tuna for extra flavour.
