Honestly, this recipe is quite a popular one at Forketti HQ. My friends love it, I love it, and I try to always have a jar in my fridge because it goes well with many dishes. I occasionally surprise friends by making them a jar. It’s easy to make, a cute gift and easy to combine with all kinds of recipes.
From Red to Pink
But how do the onions get that beautiful bright pink colour? Pickled red onions turn vibrant pink because of a chemical reaction between the pigments in the onion and the acid in the pickling liquid, in this case apple cider vinegar. That’s why it’s important to use some kind of acid if you don’t have apple cider vinegar.
I have also made this recipe with white balsamic vinegar and white wine vinegar, both worked well. Tastewise, I still prefer apple cider vinegar because it adds a subtle sweetness. You can also use lime juice as an alternative.
No Cook
This is a no cook pickled red onions recipe, but you do need to add boiling water. This helps dissolve the salt and sugar and softens the onions quicker.
How Long Do Pickled Onions Last?
Pickled onions will stay good for 4 to 6 weeks in the fridge. Make sure to sterilize your jar beforehand and work clean. You can do this by adding boiling water to the jar and drying it with a clean paper towel or dish towel.

Equipment
- glass jar
Ingredients
- 2 red onions
- 30 ml boiled water
- 2 tbsp apple cider vinegar or white wine vinegar
- 1 lime juice
- 1 tsp honey
- 3 bay leaves
- 1 tsp thyme
- a bit pepper
- a bit salt
Instructions
- Boil water in a kettle.
- Remove the outer layer of the red onions, then cut them in half and slice into thin half-moon slices.
- Add the sliced red onions to the jar, separate them slightly while doing this.
- Add to a glass jar; honey, thyme leaves, bay leaves, salt and pepper
- Add the lime juice and vinegar. Add the boiling water until the onions are covered. Close the jar with a lid.
- Shake the jar and keep in the fridge for at least 2 hours. Shake every now and then.
