Nachos with Cheddar Cheese
Homemade Cheddar Cheese with Guacamole and Pico de Gallo

Ingredients
CHEDDAR CHEESE
- 50 grams butter
- 2 tbsp flour
- 300 ml milk
- 200 grams cheddar cheese grated
- 1/2 tsp cayenne pepper
- a bit salt & pepper
- 1 tbsp honey (optional)
NACHOS
- 450 grams tortilla chips
- 6 tbsp guacamole
- 4 tbsp pico de gallo
- a bit cilantro aka coriander
Instructions
CHEDDAR CHEESE DIP
- Melt the butter in a saucepan over medium heat.
- Once the butter starts to bubble, add the flour and stir with a spatula.
- Add the milk and whisk until the mixture thickens.
- Add cayenne pepper, salt and pepper, and whisk again.
- Add the grated cheddar cheese and whisk until melted.
- (OPTIONAL) Add honey or another sweetener and whisk to combine.
NACHOS
- Place tortilla chips in a bowl.
- Add guacamole to the center.
- Pour the cheddar cheese dip around the guacamole.
- Top with pico de gallo and cilantro.
Notes
Make your own Pico de Gallo by chopping tomatoes, red onions, cilantro, lime juice and salt to a bowl. Mix and set aside for 30 minutes.
