Equipment

  • Mixing bowl
  • oven + baking tray

  • whisk or mixing machine

Ingredients
 

  • 200 grams shredded coconut
  • 3 eggs
  • 100 grams sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  • Preheat the oven to 160°C (320°F).
  • In a mixing bowl, combine the shredded coconut, sugar, vanilla extract and salt.
  • Separate the eggs in a small bowl, keeping the egg whites. Add the egg whites to the coconut mixture and mix.
  • Line a baking tray with baking paper.
  • Use a cookie scoop or tablespoon to form balls and place them on the tray.
  • Bake in the oven for 20-25 minutes until the macaroons are golden brown.
  • Remove from the oven and let them cool down.

Notes

Optional:
Melt chocolate and dip the coconut macaroons in it. Place them on baking paper and let them cool in the fridge for about 30 minutes.
