Wondering what to do with your leftover rice? This Asian flavoured stir fry is one of my go to recipes when I need a quick fried rice recipe. It is low effort and is ready in less than 10 minutes when you already have leftover rice. No leftover rice available? Then it takes less than 15 minutes. This recipe is perfect for a weekday dinner or to bring to work.
I used basmati rice as it think that it goes well with the other flavours. As mentioned before, the rice I used was leftover from a previous meal and stored in an airtight container in my fridge. If you do not have leftover rice, you can simply cook some fresh rice and let it cool down a bit before using it.
I have tried many versions of this easy fried rice, but the one below is the one I make most often. You can play around with the ingredients in your fridge! I sometimes use mushrooms instead of peas, and give them a quick fry before mixing them with the rice. I have also used shallots instead of spring onions.
I have made this dish for my friends’ toddler a few times and he seemed to enjoy it quite a lot. When I cook this for my younger friends, I leave out the crispy chilli oil. Instead I use a small amount of fish sauce to bring in a bit of extra flavour.
This recipe is ideal when you are short on time but still want something delicious.

Easy Soy Fried Rice

Ingredients
- 100 grams basmati rice uncooked*
- oil use soy bean oil or any other neutral oil
- 2 eggs
- 2 spring onions
- 1 clove garlic
- a bit ginger
- 1/2 tsp crispy chilli oil
- 1 1/2 tbsp soy sauce
- 2 tbsp oyster sauce
- 40 grams frozen peas
Instructions
- ***Skip this step in case your rice has been cooked already and you are using leftover rice***. Add the rice to a bowl or cooking pot. Add water and wash the rice by stirring it with your hand or with a spoon. Discard the water by using a fine sieve or by slowly tilting the pot. Repeat this process 3 times.
- Clean and chop off the ends of the spring onions. Slice them thinly. Keep a few slices per person aside for garnishing.
- Heat a frying pan over medium high heat and add oil. Add the spring onions and sauté until they start to turn brown.
- Meanwhile, grate or chop the garlic and add it to the pan. Add the crispy chili oil and mix it with the onions and garlic.
- Remove the peel of the ginger by using the edge of a spoon or just use a knife to cut off the peel. Grate the ginger and add it to the pan. Mix everything together.
- Crack an egg into a bowl and beat it with a fork until the yolk and egg white are combined.
- Slide the onions to the side of the pan with a spatula. Pour the beaten egg into the empty space. Wait about 8 to 10 seconds, then scrape the bottom of the pan. Use the spatula to break the egg into smaller pieces, almost like scrambled eggs. Mix the scrambled egg with the onions.
- Add soy sauce and oyster sauce. Add the cooked rice to the pan.Mix the rice well with the rest of the ingredients.
- Taste. If needed, add a bit more soy sauce and/or oyster sauce.
- Add the peas and mix with the rice. Switch off the heat, place a lid on the pan, and let the peas steam for a few minutes.
- Heat a second frying pan and add oil. Crack an egg into a small bowl, then gently slide it into the hot pan. Fry until the edges become crispy.
- OPTION 1 (difficult):If you want a perfectly shaped rice mountain, use a small bowl. Add a few drops of water to the bottom to prevent sticking. Scoop the stir fried rice into the bowl and press it down gently with the back of a spoon. Hold the small bowl in one hand and place a plate upside down on top of it with the other hand. Flip both together in one movement, about 180 degrees. Keep them pressed together during the flip. Remove the bowl.
- OPTION 2 (easy); Add the fried rice to a bowl.
- Place the fried egg on top of the rice. Finish with a few slices of spring onion, some crispy chili oil to taste and a sprinkle of sesame seeds.
