Spanish Padrón Peppers

Padrón peppers, also called Pimientos de Padrón, are easy and simple to make. The pepper itself is the flavour star of the dish. You only need 3 ingredients and just a few minutes to prepare this dish. I like to sprinkle a generous amount of salt on top, and serve them either warm or cold. Make them when hosting a Spanish tapas night, bring them along for a picnic, or serve them as a healthy snack.

Equipment

Ingredients
 

  • 2 tbsp olive oil
  • 500 grams padrón peppers
  • a bit kosher salt

Instructions

  • Rinse the padrón peppers under water to clean them. Set them aside.
  • Heat a large frying pan over high heat.
  • Add a little bit of olive oil to the pan.
  • Add the peppers and sear them over high heat for 2 – 3 minutes without moving them. Then stir occasionally and cook until the skins are blistered and slightly charred.
  • Add the peppers to a bowl and sprinkle generously with kosher salt.
  • Serve warm or cold!
