Passion Star Dessert

This passion fruit dessert is an eye catcher and is inspired by the flavours and look of the famous Porn Star Martini cocktail. It’s alcohol free and ready in just 5 minutes. This layered dessert is perfect for the holidays or when hosting a dinner party. Hope you like it as much as I do!

Passion Star Dessert

Layered Dessert with Passion Fruit, Crumbled Cookies and White Chocolate Curls

Equipment

  • Mixing bowl
  • 2 cocktail glasses or use a wine glass
  • ziploc bag or reusable bag

Ingredients
 

  • 300 grams vanilla Skyr*
  • 60 ml mixed fruit drink (for Skyr)
  • 2 tbsp mixed fruit drink (for cookies)
  • 1 tbsp honey
  • 8 oatmeal cookies (for crumbling)
  • 2 oatmeal cookies (for dipping)
  • 2 passion fruit
  • a few squares white chocolate

Instructions

  • Add to a mixing bowl; vanilla skyr*, mixed fruit drink and honey. Mix. Set aside
  • Use a ziploc bag or reusable bag. Add the cookies to the bag and use a rolling pin to crush the cookies.
  • Use a peeler to make white chocolate curls. Peel on the edge of the chocolate bar and use a small bowl to catch the curls.
  • Wash and cut the passion fruit in halves. Use a spoon and go along the edges of the fruit to loosen the seeds.
  • Layering the dessert; add on the bottom of the cocktail glass half of the passion fruit.
  • Add to a small bowl some of the fruit drink. Dip a cookie for 3 seconds in the drink and add upside down in the cocktail glass. Watch the video at 1:19 if it's unclear.
  • Add per glass around 150 grams (5 oz) of the Skyr mixture.
  • Add the cookie crumbs, but leave the center free.
  • Add the white chocolate curls.
  • Finish by adding half of the passion fruit to the center.

Notes

*For this recipe I am using Skyr, which is a traditional Icelandic dairy product. The Skyr I used is vanilla flavoured. If you can’t find that in your supermarket then use regular Skyr with a little bit of vanilla extract.
