Poached Pears in Red Wine Sauce
Pears with Vanilla Skyr, Blanched Almonds and Red Wine Sauce

Ingredients
- 3 pears
- 750 ml red wine
- 1 orange
- 1 cinnamon stick or use ground cinnamon
- 10 cloves
- 2 star anise
- 1/2 tsp vanilla extract
- 1 tbsp sugar
- 5 squares chocolate
- 8 tbsp almonds
- 250 ml vanilla Skyr or use vanilla yogurt
Instructions
- Peel the pears. Cut them in halves and remove the core with a knife or melon baller.
- Cut a slice of orange and insert the cloves into it. Juice the rest of the orange.
- Heat a cooking pot over medium heat. Add the wine, cinnamon, anise, vanilla extract, pears and orange juice.
- Cover the pot and simmer on low heat for about 45 minutes.
- Turn off the heat and let cool for at least 2-3 hours (preferably overnight) with the pears in the sauce.
- Chop the almonds. Roast them in a frying pan over medium-high heat until golden. Set aside to cool.
- Add 2 ladles of the sauce to a saucepan. Add chocolate squares and sugar. Warm over medium-high heat.
- Warm the pears for a few minutes.
- Serving. Use a plate and add a couple of tablespoons of Skyr to the plate. Make swirls. Add the pears to the center. Use a tablespoon to sprinkle a bit of the chocolate-wine-sauce.
- For serving, add a couple of tablespoons of Skyr to a plate and make swirls. Place the pears in the center, drizzle with chocolate-wine sauce and sprinkle roasted almonds on top.
