‘Sun-dried’ Tomatoes
Tomatoes Dried in the Oven

Ingredients
- 700 grams tomatoes
- a pinch salt
- 4 tbsp vegetable oil canola oil
- 1 tbsp vinegar white balsamic or apple cider vinegar
ITALIAN HERB SEASONING
- 1/4 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp rosemary
Instructions
- Preheat oven to 100°C (210°F).
- Remove the vine from the tomatoes, rinse with water and cut them in half.
- Place the tomatoes on an oven tray lined with baking paper.
- Sprinkle Italian herb mix and salt over the tomatoes.
- Bake the tomatoes for 90 minutes at 100°C (210°F).
- Remove the tomatoes from the oven and increase the oven temperature to 175°C (350°F).
- Transfer the tomatoes to a plate or chopping board and carefully squeeze them with a fork.
- Return the tomatoes to the oven tray and bake for an additional 35-40 minutes at 175°C (350°F).
- Remove the tomatoes from the oven and place them on a plate to cool for 10-15 minutes (do not let them cool on the paper to avoid sticking).
- Transfer the tomatoes to a jar, add vinegar, a bit of salt and a little Italian herb mix.
- Add the vegetable oil. Add the lid and shake the jar.

You can use any sweet tomato type you like
