Equipment

Ingredients
 

  • 700 grams tomatoes
  • a pinch salt
  • 4 tbsp vegetable oil canola oil
  • 1 tbsp vinegar white balsamic or apple cider vinegar

ITALIAN HERB SEASONING

  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp rosemary

Instructions

  • Preheat oven to 100°C (210°F).
  • Remove the vine from the tomatoes, rinse with water and cut them in half.
  • Place the tomatoes on an oven tray lined with baking paper.
  • Sprinkle Italian herb mix and salt over the tomatoes.
  • Bake the tomatoes for 90 minutes at 100°C (210°F).
  • Remove the tomatoes from the oven and increase the oven temperature to 175°C (350°F).
  • Transfer the tomatoes to a plate or chopping board and carefully squeeze them with a fork.
  • Return the tomatoes to the oven tray and bake for an additional 35-40 minutes at 175°C (350°F).
  • Remove the tomatoes from the oven and place them on a plate to cool for 10-15 minutes (do not let them cool on the paper to avoid sticking).
  • Transfer the tomatoes to a jar, add vinegar, a bit of salt and a little Italian herb mix.
  • Add the vegetable oil. Add the lid and shake the jar.

Notes

You can use any sweet tomato type you like
