Vegetarian Chili Recipe with Chocolate and Beer

Ingredients
- 200 grams vegetarian minced meat
- 240 grams black beans drained
- 140 sweet corn drained
- 1 red onion
- 2 cloves garlic
- 500 grams tomato puree
- 3 bay leaves
- 1/3 cayenne pepper
- 1/4 tsp cumin
- 3 squares dark chocolate 70-80%
- 125 ml beer optional; alcohol free beer
- a bit olive oil
- 200 grams rice
- 1 avocado
- 4 tbsp cream cheese
- 2 tbsp water for cream cheese
- tortilla chips
OPTIONAL
- pickled onions
- a few leaves coriander
Instructions
- Heat a frying pan over medium heat. Dice the onion and grate or chop the garlic. Add these ingredients to the pan with olive oil, and fry for a few minutes until soft.
- Add the vegetarian minced meat to the pan. Add the cayenne and cumin, then stir to combine.
- Add the tomato puree and bay leaves, mix and let it all simmer for 15 minutes over low to medium heat. Make sure to cover the pan with a lid.
- Cook the rice with water for 10-12 minutes
- Add the the beans and corn to the tomato sauce, then mix well.
- 15 MINUTES LATER: add the chocolate and beer, and let it simmer for 10 minutes over medium heat. Don’t cover the pan now, as the liquid needs to evaporate.
- Add the cream cheese to a bowl, add water and mix with a fork. Set aside.
- Cut the avocado into small slices
- Remove the bay leaves from the pot.
- PLATING: Add the rice to a plate, then add the sauce. Place the cream cheese in the center, then arrange the avocado slices, tortilla chips, and pickled onions in a circle around it. Top with sesame seeds and coriander.
Notes
Alcohol evaporates when cooking, it is getting less the longer you boil it. But it can take a few hours to fully evaporate. Therefore, I recommend using alcohol-free beer if you are preparing this recipe for those who do not consume alcohol.
