Tortellini from Scratch
Homemade Tortellini with Mushrooms and Mascarpone Cheese

Ingredients
PASTA DOUGH
- 200 grams flour all purpose
- 2 eggs
- 1/2 tsp olive oil
- 1/4 salt
FILLING
- 250 grams mushrooms
- 3 tbsp mascarpone
- 2 tbsp parmesan cheese
- to taste salt
- to taste pepper
Instructions
PASTA DOUGH
- Use a large bowl or a clean countertop. Add the flour to either the bowl or the countertop.
- Take an egg and use its shell to create a well in the flour. Your flour should now look like a volcano.
- Break the eggs and add them to the center of the flour. Pour the olive oil and sprinkle salt on top of the eggs.
- Use a fork to carefully whisk the eggs, adding the flour gradually until the mixture becomes sticky.
- Discard the fork and use your hands to knead the dough until all the ingredients are well combined. This usually takes about 10-15 minutes. Shape the dough into a ball, cover it with plastic wrap, and let it rest for 30 minutes.
FILLING
- Use a food brush to clean the mushrooms. Chop the mushroom in small pieces.
- Heat a frying pan over medium-high heat. Add some olive oil. Grate the garlic and add to the pan.
- Add the mushrooms and fry until they are soft. Season with salt and pepper.
- Remove the liquid; you can do this by using a spoon and a bowl, or by sieving the mushroom mixture over the sink. Transfer the mushrooms to a bowl and let them cool for at least 5 minutes.
- Add the mascarpone and parmesan cheese to the bowl. Mix everything together with a fork and set aside.
DOUGH STRETCHING
- Remove the plastic wrap from the dough and sprinkle a little flour on the countertop. Cut the dough in half and use a rolling pin or wine bottle to flatten it. The thickness should be similar to that of a coin and the width should be about 15 cm (6 inches). Make sure to straighten the edges by cutting off any excess dough.
TORTELLINI SHAPING
- Cut the dough into 2 equal strips (7,5 cm or 3 inchess), then cut into equal squares.
- Add a teaspoon of filling to the center of each square. Brush the edges with water using a brush or your fingers if you do not have one. Close the tortellini by folding one edge to the opposite edge to create a triangle, make sure the filling is at the bottom and one edge is pointing to the top. Fold the two side edges together and press them to seal. Please watch the recipe video at 3:34 for visual guidance.
- Repeat until you have used all the filling and dough.
BOILING PASTA
- Bring a pot of water to a boil and add salt.
- Carefully add the tortellinis to the boiling water and cook them for 3-4 minutes.
- Remove the tortellini with a slotted spoon, transfer them to a plate, top with a bit of olive oil, salt and pepper.
