Looking for some healthy breakfast inspiration? This coconut flavoured chia pudding is a real eye catcher and can be made by anyone who can read.
I recently found 12 of these beautiful ice cream coupes in Berlin. I decided to adopt them, brought them home, and gave them a deep clean. Since then I have made several breakfast bowls, and I just loooove the look of them! It feels so festive and elegant, don’t you think so?
For this recipe, I used my homemade granola. I like serving it this way because it adds a nice crunch. But you can also use a store-bought version, or even muesli works well. I used coconut flavoured Alpro yogurt, which makes this recipe completely vegan.

Kiwi Bowl with Coconut Chia Seeds, Granola and Black Berries

Ingredients
- 2 tbsp chia seeds
- 60 ml boiling water
- 200 ml coconut yogurt
- 3 tbsp granola
- 1 kiwi
- 3 blackberries
- a few mint leaves
- 2 tsp shredded coconut or coconut flakes
Instructions
- Add the chia seeds to a small bowl or cup. Boil water and pour it over the chia seeds. Let it cool down for a few minutes. Stir with a spoon, cover with a lid and place in the fridge for at least 30 minutes.
- Take the chia seeds out of the fridge and stir to make them loose. Add the coconut yogurt and mix until well combined.
- Peel the kiwi with a knife, then slice it.
- Take 3 to 4 slices of kiwi and press them against the side of the bowl.
- Add the chia-coconut mixture to the bowl.
- Add a few spoons of granola.
- Add remaining kiwi slices on top
- Add blackberries on top, together with a small sprig of mint.
- Sprinkle some shredded coconut or coconut flakes on top.
