Equipment

  • 1 Cake tin 24 or 26 cm
  • 1 mixer or whisk
  • 2 Mixing bowls big

Ingredients
 

CAKE BOTTOM

  • 250 grams flour all purpose
  • 75 grams sugar caster
  • 75 grams butter softened
  • 1 egg
  • 1 tsp baking powder

CAKE FILLING

  • 225 grams sugar
  • 125 grams butter softened
  • 1 package vanilla pudding powder
  • 3 eggs
  • 500 grams quark*
  • 200 grams sour cream
  • 200 ml whipping cream

TOPPING (optional)

  • a few spoons vanilla cream
  • 3 slices orange
  • 2 slices lime
  • 1 slice lemon
  • a couple blueberries
  • a couple mint leaves

Instructions

  • Preheat oven to 175°C (350°F).

CAKE BOTTOM (bowl 1)

  • Add a sieve to a mixing bowl. Add the flour through the sieve, add sugar and baking powder.
  • Remove the sieve. Add soft butter and an egg and mix until combined.

CAKE FILLING (bowl 2)

  • In a large bowl, add sugar, vanilla pudding powder, butter and eggs.
  • Add quark, sour cream and whipping cream. Mix until smooth.
  • Add quark, sour cream and whipping cream to the bowl. Mix all ingredients until smooth.

CAKE TIN

  • Grease a cake tin with butter, then add the cake mixture (bowl 1) to the tin. Spread and press the dough with a spoon or glass, create an 1.5 cm (1 inch) edge.
  • Pour in the filling (bowl 2) and smooth the surface with a spatula.
  • Bake for 75 minutes.
  • Cool at least for 30 minutes.

TOPPING

  • Spread vanilla cream on top with a spatula.
  • Slice the citrus fruits and arrange them on the cake.
  • Add blueberries and mint leaves.

Notes

*Quark is a traditional German cheese; use labneh, cottage cheese, cream cheese, ricotta cheese or Greek yogurt if unavailable.
