Equipment

  • grater
  • Mixing bowl

Ingredients
 

  • 500 grams Greek Yogurt
  • 1 cucumber
  • 1 lemon lemon juice
  • a bunch fresh dill or use dried
  • a bunch fresh mint leaves or use dried
  • 2 cloves garlic
  • 1 tsp salt
  • a bit pepper

OPTIONAL

  • 1 tbsp honey*

Instructions

  • Grate the cucumber, add it to a bowl and sprinkle with salt. Let it rest for 15 minutes.
  • Use a sieve to drain the cucumber, pressing out excess liquid.
  • Add to a bowl the grated cucumber. Add yogurt, garlic and lemon juice. Mix well.
  • Chop the mint leaves and dill, then add them to the cucumber mixture. Stir it all together.
  • Keep it in the fridge for at least 2 hours. Serve with with olive oil and slices of cucumber and/or olives. Enjoy with pita bread or any bread you like.

Notes

*Sometimes I enjoy adding a touch of sweetness. If you like that too, you can add some honey.
