

This recipe is for anyone wondering how to make overnight oats. This easy-peasy breakfast recipe is a healthy breakfast version of an apple pie. It is a festive but super easy breakfast bowl that can also be served on busy weekdays. In this post, I’m sharing exactly how I do it and how I serve this apple pie breakfast bowl.
Apples
For this recipe, I used Pink Lady apples (this is my personal recommendation, this is not sponsored). Pink Lady is a branded apple variety known as Cripps Pink. I think they work really well because they are sweet and don’t turn into mush after cooking. You can use any other sweet apples you like. If you only find sour apples, I recommend increasing the sweetness with honey or maple syrup to balance the tartness.
Overnight Oats
I cook the oats first before putting them in the fridge and leaving them overnight, and that’s apparently not how most people do. Most people mix the oats with cold milk and put it straight into the fridge. But I like it this way, as it allows the flavour to develop and mix the milk with the oats and other flavourings.
I used broken oats instead of whole oats, because I feel they combine better with the milk and grated apples. I have also tried it with whole oats, but I prefer the broken ones, as whole oats can become too dominant in flavour.
Breakfast Prepping
This recipe is also great if you want to meal prep your breakfast and save time on busy mornings. You can prepare the oat mixture ahead and keep it in the fridge for a few days. Just make sure to keep it separate from the apple-berry mixture. If you do prepare it ahead, it will probably take you only 2 minutes to assemble this breakfast bowl.
Serving Warm
I recommend serving this recipe cold, but if you prefer, you can enjoy it immediately after cooking the oats.
Vegan
This recipe is nearly vegan. You can use soy milk (like I did for this recipe) to mix with the oats. I used honey to sweeten the sliced apple topping. Some vegans eat honey, while others don’t. Just check with the person you are preparing this recipe for. Or, to be on the safe side, you can replace the honey with maple syrup or any other sweetener.

Apple Pie Overnight Oats

Equipment

Ingredients
OATS
- 2 apples
- 100 grams oats
- 500 ml milk
- 1 tsp cinnamon
- 1/2 tsp vanilla essence
TOPPING
- 2 apples
- 1 tbsp coconut oil or use butter
- 1/2 tsp cinnamon
- 2 tsp honey
- 1/2 tsp vanilla essence
- 60 ml water
- 45 grams raisins
- 100 grams blueberries
- 4 tbsp blanched almonds chopped
Instructions
OATS
- Wash the apples and grate them. Use a box grater on the largest coarse side
- Add the milk and oats to a pan and stir to combine. Turn the heat to medium-high. Keep stirring for a few minutes until the milk starts to simmer and small bubbles appear. Then, reduce the heat to low.
- Add the grated apples, cinnamon and vanilla essence. Stir until everything is combined, then switch off the heat. Let it cool for about 30 minutes before transferring to a container.
- Keep the container with the apple-oat mixture in the fridge for at least 10 hours.
APPLE PIE TOPPING
- Peel the apples, remove the core and cut them into slices.
- Heat a frying pan over medium heat. Melt the coconut oil in the pan. Add the apples, cinnamon, vanilla essence, honey and a splash of water. Stir and let simmer.
- Let it simmer until the apples become soft. Turn off the heat.
- Add raisins and blueberries, stir and set aside to cool.
- Heat a frying pan over high heat. Add the chopped and blanched almonds and toast them without oil until golden brown.
ASSEMBLING
- Take the apple-oat mixture from the fridge and stir with a spoon. If it’s too thick, add a splash of milk and stir again.
- Add a few spoons of the apple-oat mix to a bowl. Add a few spoons of the cooked apple topping.
- Top with the toasted almonds.
